I think we can both agree that pesto is amazing. It’s so super simple but so super delicious, as is this recipe we have created for your and our taste buds.
With a bit of imagination, you can incorporate pesto into so many dishes to give them an extra kick. Often pesto is based on basil, but there are so many different ways of creating a pesto, like with rocket and kale!
I adore rocket leaf (which is also referred to as Arugula by the way), the spicy, fiery kick is perfect for an intense flavour in pesto. Alongside the flavour comes health benefits! These brilliant leaves are filled with vitamins that promote bone health to helping your heart.
Even more nutritiously rich, we have our super cheap superfood: kale. Kale is a good source of iron, calcium, protein and omega-3 – all of which are supposedly difficult to get on a vegan diet.. pft. These anti-inflammatory, vitamin rich leaves are combined with Pine nuts, garlic and other vegan ingredients to start brewing some pesto-inspired recipe ideas!

- 2.5 cups kale
- 1 cup rocket leaf (Arugula)
- ¼ cup pine nuts
- ¼ cup cold pressed rapeseed oil
- 3 garlic cloves, minced
- 1 tbsp. lemon juice
- 1 tsp apple cider vinegar
- 1 tbsp. nutritional yeast
- 1 tsp salt & pepper
- Simply throw all the ingredients into a food processor and blend for a few minutes until smooth!
- Transfer into a jar or straight onto your pasta!
